CHORIZO SOUP from The Cozy Apron



This is so good and I've made it twice. It comes from The Cozy Apron. I use onion instead of leeks, sometimes I use drained and rinsed canned lentils in place of navy beans, chicken sausage or chicken meatballs in place of pork chorizo, one russet potato in place of a sweet potato, and I leave out the cilantro and spinach leaves. I puree the fire-roasted tomatoes and use a heaping 1/2 cup. I add 1/2 cup chopped frozen carrots too and I use red pepper flakes, a heaping 1/8 teaspoon, in place of pepper. I use half the amount of chili powder, cumin, and smoked paprika and I add 1/2 t. fine table salt. It takes about 20 minutes to cook the onion fully and another 15 or so to cook the soup until the potato's done. I add the canned lentils and fully cooked chicken meatballs or chicken sausage once the soup is completely finished.

I grade this an A because of the changes I made.
